Here's Mama Liu's recipe for Sweet and Sour Spare Ribs (糖醋排骨) 6park.comIngredients - 1.5 lb pork ribs - 1/4 tsp salt - 1/4 tsp pepper - 1 egg white - 1 tsp corn starch - 3 tbsp wine - 3 tbsp ketchup - 2 tbsp black vinegar - 2 tbsp soy sauce - 5 tbsp sugar - 2 cup water - 1 tsp shredded ginger - 1 tsp sesame seed 6park.comDirections - Wash ribs , soak in water 20 minutes - Marinate ribs with 1/4 tsp salt/1/4 tsp pepper/1 egg white /1 tsp corn starch/1 tbsp wine ,mixing them well, rest about 15 minutes. - Make sweet & sour sauce with 2 tbsp black vinegar/2 tbsp wine/3 tbsp ketchup/2 tbsp soy sauce/5 tbsp sugar/2 cups water, mixing them well, ready for use. - Pan fry ribs till change slightly yellow color , add 1 tsp shredded ginger, stir well, pour in sweet & sour sauce, cover, cook at medium heat for about 30 minutes, for the last 5 minutes, cook at high heat, ready to serve.
