Here's Mama Liu's recipe for Braised Pork w/ Eggs. 6park.comIngredients 2 lbs pork knuckle meat 10 or more boiled eggs 2 green onions 1tsp chopped ginger 1/4 tsp five-spices 1 tsp chopped garlic 1 star anise 5 peppercorns 2 tbsp wine 1 tbsp oyster sauce 1/4 tsp white pepper 3 tbsp sugar 2 tbsp black soy sauce 1 tsp salt 1 tsp sesame oil 6park.comDirections - Clean and chop 2 lb meat into pieces. Boil 12 eggs. - Clean and chop 1 tsp ginger/1 tsp garlic /2 green onions. - Boil meat with 1 tbsp wine and some ginger starting cold water about 2 minutes, then wash and drain the blood foam, ready to use. - Make sauce with 2 tbsp black soy sauce /1 tbsp wine /1 tbsp oyster sauce /1 tbsp sugar/1/4 tsp five spices /1/4 tsp white pepper/1 tsp salt /1 star anise/5 peppercorns /1 tbsp sesame oil /1.5cup water. Mixed well. - A hot wok with 2 tbsp cooking oil, add meat and 2 tbsp sugar ,stir- fried 2 or 3 mins till the meat change color ,and add ginger/garlic /scallion in stir-fried 2 mins ,then add sauce /eggs in, covered with lid ,slower cook 1 hr. - After 1 hr , garnish with green onion and red pepper .Ready to serve!
