Here's Mama Liu's recipe for egg & shrimp pancake 虾蛋夹饼 6park.comIngredients For dough: - 3 cup all purpose flour(12 pancakes) - 2 tsp yeast - 1 tsp sugur - 1 or 1.5 cup warm water For pancake : - 2 tbsp sesame oil - 1/2 tsp black pepper - 1 tbsp scallion For egg & shrimp: - 2 or 3 large eggs (1/4 tsp salt and beat well) - 12 prawns - 1 tsp wine - 1/4 tsp pepper - 1/2 tsp salt (1/4 tsp salt for egg /1/4 tsp salt for shrimp ) - 1 tbsp scallion 6park.com Preparation: - Make the dough, mix 3 cups of all-purpose flour with 2 tsp yeast/ 1 tsp sugar/about 1.5 cup warm water in bowl, and rest at warm place for 1 hr. - Clean shrimp, marinate with 1tsp cooking wine /1/4 tsp pepper/ 1/4 tsp salt / 2 eggs(Put 1/4 tsp salt into the egg ,beat eggs well) /1tbsp scallion ,mixing them well . - Add 2 tbsp vegetable oil into pan , then add eggs and shrimps in pan , pan-fry at medium heat about 2 or 3 minutes , remove from the pan, put in side bowl , ready to use . Make pancake , after one hour a dough rising up double size, knead the dough to big round shape, put sesame oil /1/2 tsp black pepper / 1 tbsp scallion , wipe evenly , then rolling up , and divide to 12 pieces , use the rolling stick to make pancake . Put 2 tbsp cooking oil in Pan , add pancake , fry each side about 3 minutes at medium lower heat , move out to the plate , ready to use .
