Here's Mama Liu's VEGETARIAN recipe for spinach vermicelli salad (波菜粉条沙拉) 6park.comIngredients - 4 oz noodles (sweet potato noodle) - 1 lb spinach - 1 tbsp minced garlic - 1 chopped carrot - 1/2 head onion - 1/2 tsp salt - 1/4 tsp black pepper - 1 tsp chilli pepper - 1 tbsp boiled oil - 1 tsp sugar - 2 tbsp soy sauce - 1 tbsp vingar - 1 tbsp sesame oil 6park.comDirections - Put noodles in boiled water for about 3 or 4 minutes, rinsing with cold water , draining noodles, ready for use.( thin noodles boiled very short time ) - Make sauce with 1 tbsp minced garlic /1 tsp chills pepper(or no need) / 1 tbsp sesame seed / 1/2 tsp salt (or less) /1/4 tsp black pepper , pour 1 tbsp boiled oil in , add 2 tbsp soy sauce /1 tbsp vinegar / 1 tsp sugar / 1 tbsp sesame oil in a bowl, mixing them well, rest about 10 minutes ,ready for use. - Wash & chop garlic/carrot /onion/spinach . - Pour 1tbsp cooking oil in wok, add garlic / carrot / onion, stir -fry at medium lower heat about 2 minutes, then add spinach stir about a few second , take out , put in a big bowl , cool down , draining and dry the vegetable , ready to use. - Put noodles & vegetable in a big bowl ,add sauce in, mixing them well, ready for serving.
