Use wide vermicelli noodles. - Wash and cut chicken into pieces, boil the chicken with 1 tbsp wine /1 scallion/ 3 ginger slices in pot for about 3 mins, remove foam, wash and drain, ready to use. - Chop scallion/garlic/red pepper/ginger /mushroom. - Make sauce with 1 tsp salt / 1/4 tsp white pepper/1tbsp wine/1tbsp oyster sauce/1 tsp sugar/ 2 tbsp dark soy sauce / 1 tbsp light soy sauce /1.5 cup water...mix well. - Pour 2 tbsp cooking oil in wok, add garlic / scallion /ginger/ 2 star anise /some peppercorns and mushrooms, stir about 1 minute, and then add chicken, stir about 3 minutes, add sauce...cook for 25 minutes at medium heat, covered with lid.
