Welcome to Mama Liu's Kitchen for easy, authentic homestyle Chinese food recipes.Here's my recipe for Sichuan boiled fish ( shui zhu yu , 水煮鱼) 6park.comIngredients - 2 or 3 fish fillets (branzino, sea bass, snapper, or catfish) - 2 tbsp soybean paste( 1 hot spicy /1none spicy) - 2 tsp pepper corn - 1/2 cup red dry pepper - 1/2 head lettuce - 1 tsp salt - 1/2 tsp white pepper - 1 egg - 2 tbsp cooking wine - 2 tbsp corn starch - 2 tbsp chopped scallions - 1 tbsp chopped garlics - 1 tbsp chopped ginger - 1.5 cup water - 1/2 cup cooking oil 6park.comDirections Wash and slice the fish . Marinate the fish with 1 tsp salt, 1/2 tsp white pepper,1 egg /2 tbsp cooking wine , 2 tbsp corn starch, mixing them well, rest 15 minutes. Wash and chop 2 tbsp scallion/1 tbsp garlic/1 tbsp ginger. Boiled 1/2 lettuce about 30 seconds, place them in a big heat-proof serving bowl , ready to use. - Fry the fish at medium heat , wait each side change to golden color , take out , put in a bowl . - Pour 2 tbsp cooking oil in wok, add and stir -fry 1 tbsp garlic , 2 tbsp scallion , 1 tbsp ginger , 2 tsp pepper corn,1 hot red bean paste ,1 none spicy bean paste at medium heat, stir for ~1 minute, and then add 1.5 cup water , boiled about 1 minute . Put the fish in , boiled about for 1or 2 minute , pour on top of lettuce in the big bowl . - Boiled 1/2 cup cooking oil with red dry pepper, just 30 seconds, pouring on the fish, ready for serving.
