Here's Mama Liu's recipe for Shrimp Tofu Clay Pot 大虾豆腐煲 6park.comIngredients - 12 prawns (shrimp) - 12 oz tofu - 2 tbsp chopped scallion - 4 sliced ginger - Some spring veg - 1 egg - 2 tbsp wine(1tbsp for marinate shrimps / 1 for shrimp head sauce) - 1/2 tsp salt ( 1/4 tsp for egg /1/4 for tofu ) - 1/4 tsp sugar - 1/2 tsp white pepper - 1tsp sesame oil - 1.5 cup chicken broth or water 6park.comDirections - Clean shrimp, keep the shrimp head on side - Chop 2 tbsp scallion - Slice 4 ginger - Slice tofu - Wash the spring vegetable - Marinate shrimp with 1tbsp wine /1/4tsp salt/ 1/4tsp pepper, mixing them well, rest 15 minutes. - Marinate tofu with 1egg /1/4 tsp salt /some green onion. - Pan-fry tofu at medium heat , till 2 sides change golden color. - Spread spring vegetable in the pot , then put 4 sliced ginger , and place the tofu in . - Make shrimp-head sauce , pan -fry first ,then add 1tbsp wine / 1/4 tsp sugar /1/4 tsp pepper / 1cup of chicken broth or hot water , boil about 1 minute ,pick up the shrimp head, pour the sauce in on top of tofu in clay pot. - Add shrimp in clay pot , pour about 1/2 cup of hot water , boil about 10 minutes till shrimp change color , add 1 tsp sesame oil , garnish with green onion, ready to serve .
