Here's Mama Liu's recipe for Chinese Beef Scallion Noodles 牛肉葱油面. 6park.comIngredients - 1lb minced beef - 2 portion noodles - 2 tbsp chopped scallions - 1 tbsp chopped garlic - 1 tsp dry red pepper - Bok Choy - 1/4 tsp salt - 1/4 tsp white pepper - 1 tbsp wine - 1 tbsp oyster sauce - 1 tsp sugar - 2 tbsp soy sauce - 1 tsp sesame oil - 1 tbsp bean paste 6park.comDirections - Chop scallion/garlic, clean some Bok Choy. - Put noodles in boilingwater about 5 minutes, rinse and drain the noodles, ready to use. - Make the sauce with 1 tbsp wine / 2 tbsp soy sauce / 1 tbsp oyster sauce / 1 tsp sugar / 1/4 tsp salt/ 1/4 tsp white pepper/ 1 tsp sesame oil in a bowl mix well. - Pour 1 tbsp cooking oil in wok, add garlic , stir for 1 minute, then add meat stir at medium heat about 2 minutes. Add 1 tbsp bean paste, cook for about 2 minutes. Pour the sauce in, stir -fry 2 more mins, move in the bowl, ready to use . - Put cooked meat/ Bok Choy/ chopped scallion / red peppe r/ a pinch of salt on top of noodle, then pour 1 tbsp smoking oil and 1 tsp vinegar on it. - - Mixed well, ready to serve!
