Ingredients (2 servings)
- 3-4 large eggs (1/4 tsp salt and beat well)
- 3-4 Campari tomatoes (may substitute similar sized, on-the-vine is best)
- 2 serving dry- noodles
- 1 tbsp minced garlic
- 1 tbsp chopped cilantro for garnish
- 1/2 tsp salt and 1/2 tsp sugar
- 1 cup water or broth
- 2 tbsp vegetable oil
- 1 tsp soy sauce
- a few drops of sesame oil

Preparation:
- Chop garlic and cilantro.
- Cut each tomato into small pieces (remove the stems).
- Put 1/4 tsp salt into the egg bowl and beat eggs well.
- Add 2 tbsp vegetable oil into medium heat wok, and add the eggs,
scramble the eggs and remove form the wok, put in side bowl.
- Add 1 tsp vegetable oil into the wok, medium/high heat, add garlic,
then add tomatoes /1/2 tsp salt/1/2 tsp sugar/1/4 tsp white pepper/1tsp soy sauce, stir-fry, put eggs in , and add 1 cup water, stir for minute. Mix until tomatoes are completely softened. Add in a few drops of sesame oil. Garnish with cilantro. Ready to serve!
